We’re singing the praises of the broiler this week. In case you’re not familiar with this part of your stove, think of it as an upside-down grill. It uses high, direct heat—just like a grill—but in this case, it comes from above. The blast of heat creates a caramelized crust, which means big flavor.

The broiler is a boon for the weeknight cook that you really should be using more. To that end, we’re sharing several recipes that show how quick and versatile the broiler is. We don’t want to go overboard, so we aren’t sharing five broiled dinner recipes—but we could have, easily.
