1 large sweet potato, cubed, cooked, about ¾ cup mashed

1 cup almond milk, or your preferred plant-based milk

1 tbsp flax seeds, ground, also known as flax meal

4 tbsp water

2 tsp canola oil

1 cup almond flour

2 tsp baking powder

Prepare the flax egg by mixing the flax meal with water. Let it set and absorb liquid for at least 5 minutes.

Combine the sweet potatoes, milk, oil, and flax egg in a bowl. Mix well.

Add in the flour and baking powder and mix until smooth.

Preheat the waffle iron and coat with cooking spray.

Cook the waffles according to the manufacturer’s instructions.

Serve with maple syrup or toppings of your choice. Enjoy!
