1 lb ground beef

3 cups macaroni pasta, cooked & cooled

3 oz yellow onions, diced

15 oz tomato sauce

2 tsp garlic, minced

½ tsp ground black pepper

1 cup cream cheese, or cottage cheese

1 cup cheddar cheese, grated

1 cup monterey jack cheese, grated

1 cup mozzarella cheese, grated

1 cup sour cream

½ cup parmesan cheese, grated or powdered

To serve:

parsley, chopped

Preheat the oven to 350 degrees F & grease a baking casserole of your choice.

In a wide skillet over medium heat, saute the ground beef until caramelized, roughly 5 to 8 minutes. Drain any excess oils.

Add the onions & garlic. Saute until translucent.

Add tomato sauce & pepper. Stir to combine & bring mixture to a brief simmer for another 5 minutes. Set aside.

In a large mixing bowl, combine sour cream, parmesan cheese, & cottage or cream cheese. Whisk until evenly incorporated.

Fold the pasta into your cheese mixture until evenly incorporated.

Place half of the pasta mixture into your greased baking dish, then layer with half of the beef mixture.

Sprinkle with half each of cheddar, mozzarella, & Monterey Jack cheeses. Repeat until you have 2 layers of pasta, beef, & ending with cheeses.

Bake for roughly 30 minutes or until cheese has melted & turned golden brown.

Once baked, cool the casserole briefly onto cooling racks. Portion accordingly, garnish with roughly 1 tsp parsley for the entire casserole, & serve.
