1¼ lb salmon fillets, skins removed & finely minced

1 tbsp olive oil

¼ cup olive oil

¼ cup yellow onions, minced

2 garlic cloves, finely minced

2 tbsp celery, minced

2 tbsp bell peppers of your choice, minced

1 tbsp capers

¼ cup mayonnaise

¼ cup breadcrumbs

1 tsp Dijon mustard

¼ tsp cayenne pepper

salt & ground black pepper , to taste

To serve:

¼ cup tartar sauce

1 cup side salad, of your choice

2 lemon wedge

In a saute pan, heat up 1 tablespoon of oil. Add onions, celery, bell peppers, and capers. Saute until translucent then set aside to cool down completely.

In a mixing bowl, combine salmon, cooled-down vegetables, garlic, mustard, mayonnaise, breadcrumbs, and cayenne pepper. Season lightly with salt and pepper, then mix to combine evenly.

Form into small patties and fry for about 5 minutes until golden brown. You can use an ice cream scooper to shape the patties, and press or release these into the hot skillet.

Serve with tartar sauce, side salad of your choice, and lemon wedges.
