1 tbsp olive oil
3 cloves garlic, peeled and chopped
1⁄4 cup onion, peeled and finely chopped
29 oz tomato sauce, (1 jar)
1 lb fresh garden tomatoes, peeled, cored and chopped, or 15 oz canned
3 tsp granulated sugar
1 cup parmesan cheese, freshly shredded
1 tbsp fresh basil leaves, finely chopped
½ tsp dried parsley
1⁄8 tsp black pepper
1 bay leaf
Heat the olive oil in a nonstick saucepan over medium heat. Add the onion and garlic and saute for a few minutes until the onion is tender.
Add the rest of the ingredients, bring to a boil, then reduce heat to a simmer and cook uncovered for about 30 to 45 minutes or until the sauce is thickened.
Remove the bay leaf. Let cool a bit, then blend until smooth.
Use as desired and enjoy.
