½ cup natural peanut butter
½ cup water
2 tbsp soy sauce, or Tamari
1 tbsp brown sugar, (if your peanut butter is sweetened skip this)
2 tbsp vegetable oil
3 garlic, minced
½ tsp red pepper, crushed
4 cups broccoli
4 chicken breasts
In a bowl, mix the peanut butter, water, soy sauce, brown sugar, oil, garlic, broccoli, and red pepper.
Vigorously whisk the mixture until it forms into a smooth consistency. Cover and set aside.
Slice the broccoli into bite-sized pieces.
Cut the chicken into strips.
In a pan, heat a tablespoon of oil and brown the chicken.
Dump the broccoli in the pan.
Pour the water into the skillet.
Lower down the heat and tightly cover the pan. Let the chicken and broccoli steam until most of the water is gone.
Dump the peanut butter mixture into the skillet. Stir to coat the chicken.
Serve on a bed of rice and savor this Quick and Easy Spicy Peanut Butter Chicken!
The longer you set it the mixture aside, the more the flavors will meld together and the spiciness will come through.
