For Cake:
1 pkg yellow cake mix
1 lb canned pumpkin
½ cup granulated sugar
½ cup oil
3 eggs
½ cup pecans, chopped
1 tsp pumpkin pie spice
For Crumble Topping:
½ cup light brown sugar
½ cup flour
¼ cup butter, softened
1 tsp cinnamon
Preheat the oven to 350 degrees F.
In a large bowl, combine all the cake ingredients.
Blend at low speed for about 1 minute until completely moistened. Beat for another 2 minutes at medium speed.
Spread the batter in a greased and floured 13x9x2-inch pan.
In a medium bowl, combine the streusel ingredients with a fork or pastry blender to form a crumbly mixture. Sprinkle the crumb topping evenly over the batter.
Bake for 40 to 45 minutes, until the center springs back when touched lightly.
Let cool and serve.
