2 lb catfish fillets, boneless and skinless, sliced into 2-inch strips
1 cup buttermilk, more as needed
vegetable oil, for frying
Batter
2 large eggs
1 cup all-purpose flour
2½ tsp paprika
2 tsp ground mustard
2 tsp black pepper
1 tbsp sea salt
2 tsp garlic powder
1 tsp onion powder
1 tsp cayenne pepper
1 tsp dried oregano
1 tsp dried thyme
1½ tbsp granulated sugar
1 tbsp baking powder
¼ cup yellow cornmeal
½ cup milk
To Serve:

mixed greens & lemon wedges
Soak the fillets in buttermilk and chill for 30 to 45 minutes.
In a separate bowl, whisk together the eggs, flour, sugar, baking powder, cornmeal, and milk.
As soon as the batter has a smooth consistency, stir in all the spices.
Chill the batter for 10 to 15 minutes.
Dip each piece of fish in the batter.
Heat one inch of oil over medium-high heat and then fry each side for 3 to 4 minutes.
Remove the cooked fish from the hot pan and drain on paper towels.
Serve with tartar sauce, French fries, mixed greens, & lemon wedges.
