8 onions, medium, thinly sliced

2 tbsp canola oil

2 large eggs

1 cup soft bread crumbs

½ cup Parmesan cheese, grated

½ cup fresh parsley, minced

In a large skillet, saute onions in oil until soft but not browned; drain well. In a large bowl, whisk eggs. Stir in the bread crumbs, cheese, parsley and onions.

Place in a greased 10-inch pie plate. Bake at 350 degrees F for 35 to 40 minutes until a knife inserted in the center comes out clean.
