10 pcs hot dogs, or beef frankfurters
6 cups mashed potatoes
¾ cup pickle relish
1½ cups cheddar cheese, can be Monterey Jack or mozzarella cheese
6 tbsp mayonnaise
2 tbsp ground yellow mustard
1 tbsp onion powder
salt and ground black pepper, to taste
For Garnish:
1 tbsp parsley, chopped
Preheat the oven to 350 degrees F.
Cut each hot dog or sausage lengthwise then crosswise. Set aside.
In a large mixing bowl, add potatoes, pickle relish, mayonnaise, mustard, and onion powder. Mix until evenly incorporated.
Season to taste with salt and pepper. Adjust accordingly
Transfer onto a baking casserole of your choice, leaving roughly 1-inch space around the casserole.
Fill the empty spaces with the hot dogs or sausage pieces around the edge of mashed potatoes, tips facing up.
Bake for about 30 minutes until mashed potatoes are hot.
After 30 minutes sprinkle with cheese.
Turn on a low broil for 5 minutes.
Serve immediately, garnished with parsley.
If you don’t have a mixer, you can manually mash the potatoes with a potato masher and subsequently add in the milk, melted butter, garlic, and salt to be mixed.
