What are the best potatoes to use?
I love to use baby red potatoes for this recipe for a couple of reasons. You can often find baby red potatoes pre-packaged at the supermarket and I almost always grab a bag. They’re generally 1.5lb bags, and it’s more than enough for us to enjoy. Red potatoes have a very dense, buttery flavor that we just love. The preparation is as simple as cutting them in half. No need to peel or anything else. If you’re using larger sized red potatoes, just cut them into quarters or chunks of about 1 inch.
Simple Seasoning Blend
To season our potatoes, we use a simple mix of garlic powder, crushed rosemary, parsley flakes, salt and pepper. That’s it. If you have other herbs that you like to use, go for it. Oregano, dill, thyme and so much more are all excellent for an herb mix. But garlic and rosemary will be the foundation for sure. Simply toss the potatoes in a bowl with a tablespoon of olive oil and the herbs until they’re all coated nicely.
Air Fry for 18-20 Minutes
Preheat your air fryer for a couple of minutes at 380°(F), then place your seasoned potatoes into the air fryer and use the air fry setting for 18-20 minutes.
