You don’t need to be an expert baker to make these apple pie roll ups. We make the steps and the process easy and fun. This really is the perfect recipe to “show off” your cooking skills to make a sweet dessert dish that is perfect for the family to enjoy after a big hearty meal.
What Are Apple Pie Roll Ups?
There’s nothing quite like a homemade apple pie. That wonderful aroma that fills the house – there’s just nothing like it. But making a whole apple pie from scratch can be quite a process. Apple pie roll ups allow us to take fresh apples and turn them into an easy-to-make, homemade delight that shares a lot of the qualities we love about apple pie, without all the fuss and mess.
Quite simply, me make an easy filling out of fresh apples, then roll it up in flour tortillas which have been brushed in butter, cinnamon and sugar, then bake until they are crispy, golden, and beyond delicious!
What Kind of Apples to Use?
You’re standing in the produce department, when all of a sudden you feel a sudden sense of dread. You’re looking at fifteen gazillion apple types, and you don’t have the slightest idea which type to reach for. You don’t even know half the names! But, we’re here to help you get through it. Golden Delicious: These little beauties are bright yellow and are plentiful for most of the year. They’re both sweet and tart, which makes them the perfect fruit for this apple pie filling. Honeycrisp: These little sweethearts are – well – sweet. They’re not lacking in flavor, and their texture holds up incredibly well in baking. The only downside? You can’t find them all year long, so when you see them in the produce section or farmers market grab them up! Gala: These wonderful apples are available year round, and provide sweetness with a lightly floral aroma. They’re quickly becoming the apple of choice for pies and tarts. Also, they’re stunners in a bowl on the counter! Braeburn: These little guys have nearly a citrus-like aroma, and their texture is firm, which means that they hold up well in pies. Fun fact, they taste a little like pears once they’re cooked, which makes them a little magical.
Any of these will work excellent for our apple pie roll ups. Personally, I’m a huge fan of honeycrisp. I just LOVE their sweetness and overall taste.
Preparation
Make the fresh apple filling
Start by peeling the apples, then slicing into ½″ pieces. A good sharp knife should do the trick quickly, but a vegetable peeler is great for peeling apples too. Place the apple pieces in a Dutch oven or heavy bottom pot, and add ⅓ cup sugar, 2 tablespoons of butter, 3 tablespoons of water, 1 teaspoon of cinnamon, the nutmeg and the salt. Heat over medium heat. I know it doesn’t seem like a lot of water in there, but no worries, there’s lots of water in those apples which will come out during this process. When it comes to a boil, reduce the heat to low and cover the pot. Simmer for about 7-10 minutes or until the apples are nice and softened. Now we’re going to thicken up the mixture with a simple cornstarch slurry. We do this by whisking the cornstarch with 1 tablespoon of water in a cup. Add the slurry to the apple mixture and stir until it thickens. About 2-3 minutes and then remove from the heat and let cool for a few minutes. Before we start the next step, preheat the oven to 375°(F).
Prepare the Roll Ups!
We need the butter melted so place it in a small bowl and microwave for about 20 seconds to melt it. Prepare a large plate with with the cinnamon and sugar mixed up and spread on the plate. We’ll use this shortly to sweeten up the outside of the tortillas. Take a medium sized casserole dish or glass baking dish and grease it up butter or non-stick cooking spray. Now it’s time to fill the tortillas with our apple filling. Simply spoon about ¼ cup of the filling into each tortilla. Then roll each one tightly and brush with the melted butter. Roll each filled tortilla and buttered tortilla on the cinnamon/sugar plate, then place with seam down in prepared baking dish.
Bake at 375°(F) for 20-25 minutes
This is getting exciting now, right? You’ve made that amazing smelling apple pie filling, rolled it up in tortillas and coated with butter, sugar, and cinnamon. Oh boy! Time to bake. Simple place the dish in the oven at 375°(F) for about 20-25 minutes. You’ll see the outside of the tortillas start to turn golden and crisp up when done.
When they’re done, remove from the oven and let them cool for a bit before serving. By now, the entire neighborhood will smell like fresh apple pie and the neighbors might come a knockin’ so be prepared. 🙂
Serve it up!
You can serve these with vanilla ice cream, or whipped cream. Caramel sauce is outstanding too. Just drizzle over the top of the apple pie roll ups. You could also add vanilla Greek yogurt on top and drizzle with a little honey! And finally, a few strawberries, blueberries, raspberries, or even blackberries would make a colorful plate even more colorful!
