For Chicken:

1 lb chicken breasts, boneless, skinless, poached, and chopped

½ cup mayonnaise

1 tsp dijon mustard

1 tbsp lemon juice

½ cup celery, chopped

⅓ cup green onions, chopped

salt and ground black pepper, to taste

To Serve:

¼ oz lettuce leaf, per serving

5 croissants, sliced and toasted

Combine all ingredients together in a mixing bowl.

Season with salt and pepper to taste.

Assemble your chicken salad sandwiches and serve.

You can make a healthier chicken salad sandwich by using lettuce wraps instead of bread and finishing your chicken salad with vinaigrette. You can also use fat-free mayonnaise.
