1 large nile tilapia, or other perch type fish

1 Thai long chili, or other mild red chili

2 Thai hot chilies

5 large garlic cloves

2 tbsp coconut sugar

2 tbsp fish sauce

1 cup vegetable oil, more or less, depending on the pan

2 tbsp all purpose flour

Coat the fish in flour and fry it in deep oil over medium heat for about 5 minutes on each side, then remove it to a wire rack to drain the oil.

Pour the oil from the pan, leaving just a little to coat the pan, then add the chilies, garlic, sugar, and fish sauce.

Fry until it makes a rich and sticky sauce.

Arrange the fish on a nice plate, then pour the sauce over it.

Serve with steamed rice. Enjoy!
