1 cup long grain rice, cooked & chilled
2 eggs, large, beaten
2 tbsp vegetable oil
1 cup frozen mixed vegetables , corn, carrots, & peas
½ cup yellow onion, diced
2 tbsp soy sauce
¼ tsp sesame oil
salt and pepper , to taste
1 green onion, chopped
Pour just enough water into your chilled cooked rice to separate the grains. Set aside.
In a deep skillet with hot oil, saute your onions & mixed vegetables briefly.
Add cooked rice & soy sauce and continue sauteing.
Make a well on the center & add your beaten eggs. Briefly scramble your eggs.
Season with salt and pepper. Adjust accordingly.
Finish your fried rice with sesame oil.
Place in a large serving bowl and garnish with green onions. If you wish, top with a sunny-side-up egg.
Prepare the rice the night before so that the rice grains will dry out properly. If you have no time to prepare ahead, you can cook the rice several hours ahead, air it to remove extra moisture, and refrigerate it for a few hours prior to cooking.
