10 oz spinach, cup

1 cup water, warm

¼ oz active dry yeast, (1 package)

¼ cup sugar

¼ cup olive oil ,

  • ⅛ cup olive oil

1 cup whole wheat flour

1 tbsp garlic powder

1 tsp salt

¼ cup basil, chopped

2 cups all purpose flour

In a covered, heat-safe bowl, microwave the spinach for 5 minutes.

Set aside to cool.

In a large bowl, sprinkle yeast into the warm water.

Let sit for 3 minutes.

Add the sugar and oil. Stir gently.

Add in the whole wheat flour, garlic powder and salt.

Squeeze water from defrosted spinach, one handful at a time.

Stir in the spinach and basil into the bread dough.

Add the all-purpose flour one cup at a time.

Use hands to knead in that last cup of flour thoroughly.

Spray a 13x8-inch baking dish with non-stick cooking spray.

Form rolls by breaking off 2-inch balls of the smooth bread dough.

Line up the rolls in a baking dish.

Cover with a damp towel and leave to rise in a warm place for 45 minutes.

Preheat the oven to 350 degrees F.

Cook rolls for 15 minutes.

Brush tops of rolls with olive oil.

Cook for another 5 minutes, until tops are lightly brown.
