1 pint cherry tomatoes, halved

⅓ cup mayonnaise, light or regular

2 tsp red wine vinegar

1 tsp Dijon mustard

¼ cup red onions, very thinly sliced, then halved

2 tbsp fresh parsley, minced

salt and pepper, to taste

Whisk together the mayonnaise, vinegar, and mustard in a salad bowl.

Add the tomatoes, onions and parsley. Mix well.

Season to taste. Serve and enjoy!
