8 red bell peppers, tops cut off and seeds removed
2 lbs ground beef
2 yellow onions, chopped
1 can tomato paste
4 cloves garlic , minced
1 tsp salt
1 tsp pepper
1 tsp garlic powder
8 slices cheddar cheese
½ cup water
Preheat the oven to 350 degrees F.
Cook the onions and garlic in an oiled pan on the stove.
Cook until the onion starts to turn translucent.
Add the ground beef and cook until brown.
Add in tomato paste and then add water.
Bring to a simmer.
Let simmer for a few minutes and then stuff the mixture into the peppers, top with cheese, and bake for about 30 to 40 minutes, or until the pepper starts to soften and char and the cheese is bubbled and starting to brown.
