6 flour tortillas, large
1 cup tomato sauce
2 tbsp taco seasoning
1 tbsp vegetable oil
½ lb ground beef
16 oz beans, canned, refried
3 cups cheddar cheese, shredded, divided
1 tbsp lemon juice
1½ cups lettuce, shredded
1 cup tomato, chopped
salt and ground black pepper, to taste
To Serve:
¼ cup guacamole
¼ cup sour cream
1½ cups lettuce, shredded
Preheat your oven to 350 degrees F and grease a 13-inch baking casserole.
Combine tomato sauce, seasoning mix, lemon juice, and oil. Stir well and set aside.
Saute ground beef in a large skillet until browned, stirring to crumble and then drain.
Stir in beans and tomatoes. Saute briefly.
Cover, reduce heat, and simmer for 5 minutes or until mixture is thoroughly heated. Stir occasionally and adjust seasoning with salt and pepper to taste. Remove from heat.
Place ½ cup beef mixture and ¼ cup cheese in the center of each tortilla. Roll up tortillas and place the seam side down in the baking dish.
Pour tomato sauce mixture over the casserole. Cover with foil and bake at for 30 to 35 minutes.
Remove the foil and discard. Sprinkle with remaining cheese. Bake an additional 5 minutes or until cheese melts.
Serve this with lettuce and any combination of condiments.
