4 lb sweet potatoes, boiled, drained, peeled, and cut into ¼ inch thick rounds
2 lb tart apples, peeled, quartered, cored, and cut in ¼ inch thick slices
¾ cup brown sugar, packed
½ cup unsalted butter , or margarine
1 tbsp freshly orange peel, grated
¾ cup orange juice
⅓ cup maple syrup , or maple flavored pancake syrup
1 tsp ground cinnamon
½ tsp ground nutmeg
Preheat oven to 375 degrees F.
Lightly grease a 13x9x2 inch baking dish.
Arrange slices in the baking dish, alternating sweet potatoes, and apple slices, slightly overlapping,
In a small saucepan, stir the sugar and butter together over medium heat until the butter melts.
Add the orange juice, orange zest, maple syrup, nutmeg, and cinnamon. Bring to a boil, stirring until smooth.
Pour the mixture over the sweet potatoes and apple slices, making sure it is evenly distributed.
Bake for 40 minutes until potatoes and apples are tender and lightly glazed.
