1 box moist spice cake
1 cup water
⅓ cup applesauce
3 eggs
2 cups carrots, grated
½ cup raisins
2 tsp orange peel, grated
Heat oven to 350 degrees F.
Coat two round cake pans with non-stick cooking spray.
Combine cake mix, applesauce, water, and eggs in a large mixing bowl.
Beat on low speed for 1 minute, continue beating on medium speed for 2 minutes.
Stir in carrots.
Pour into prepared pans.
Bake 30 to 35 minutes or until the toothpick comes out clean.
Cool for 10 minutes, turn out onto rack then cool completely.
Spread with your frosting of choice - orange or cream cheese frosting is really good.
